From the vibrant streets of India's capital city, Delhi, to becoming a chef at the Ethereal Artisan Kitchen, Jinu Abraham's culinary journey has spanned nearly two decades.
With his lure of culinary artistry and the relentless pursuit of culinary knowledge, Abraham has been crafting some magical dishes pleasing to both the taste buds and the eyes.
"My style is a nod to the diverse palate of New Zealand, woven together with the precision of culinary techniques. It's about adapting to the personality of the restaurant and the hotel I serve, currently, the DoubleTree by Hilton Karaka," said Abraham.
"The cuisine here thrives on local seasonal ingredients, allowing us to craft creative, tailor-made menus for our cherished guests."
Abraham seeks inspiration from these ingredients and embraces the ethos of local sourcing by weaving them together in his innovative cooking techniques.
However, his expertise is not limited to Aotearoa, and at a recent French food-tasting event held at DoubleTree by Hilton, Abraham and the team combined the finesse of French culinary traditions with the richness of local ingredients.
"We served delicious dishes and expertly paired each with fine French wines, creating an unforgettable experience for our guests."
Throughout his career, Abraham has had the privilege of pioneering unique dining concepts. He has been part of multiple pre-openings for restaurants and conference facilities on a national and international level.
He also prides himself in training numerous chefs who have gone on to achieve great heights in their careers and encourages others in the hospitality industry to try different roles in order to find their true passion and improve their skills.
"The culinary industry is looking for future stars, but we observe a decline in interest, particularly post-COVID. Uncertainties continue to linger, which poses a considerable challenge. We need fresh talents to infuse new life into our beloved industry."
In terms of his future, Abraham's primary goal is to establish DoubleTree by Hilton Karaka as the ultimate culinary destination in South Auckland. He wishes to elevate the dining experience and create lasting memories for guests through exceptional food and beverage offerings.
