AUSTRALIA | The Fullerton Sydney brings a hawker-inspired taste of Singapore to the heart of Martin Place in the city's centre.
As part of an exclusive cross-property collaboration with The Fullerton Hotel Singapore, The Fullerton Hotel Sydney will introduce guests to the vibrant flavours of Singaporean cuisine, a rich culinary tradition from the blending of Chinese and Southeast Asian influences.
As part of the first in a series of exclusive cross-property collaborations, Senior Sous Chef Christopher Chia from The Fullerton Hotel Singapore will join the team in Sydney, introducing diners to some of Singapore’s most beloved culinary traditions.
Named The Singapore Table, this promotion will run from Friday 17 July to Saturday 8 August 2026, at The Fullerton Hotel Sydney’s restaurant, The Place, for AUD 69.95 per person.
Chef Christopher will be showcasing the full breadth of Singapore’s culinary landscape from iconic hawker staples to elegant Singaporean classics.

Highlights include Hainanese Chicken Rice, Singapore’s beloved national dish with tender poached chicken with fragrant chicken rice, served with chilli, ginger paste and dark soy; Char Kway Teow, flat rice noodles stir-fried with prawns, Chinese sausage, egg and bean sprouts, delivering the smoky “wok hei” of Singapore hawker stalls; Peppery Bak Kut Teh, a comforting pork rib soup simmered with garlic, white pepper and aromatic spices; Singapore Laksa, rice noodles in a creamy coconut-curry broth, topped with prawns, fish cake and tofu puffs; and Chilli Crab Lala, fresh clams tossed in a rich, sweet and spicy tomato-chilli sauce.
Over the past decade at The Fullerton Hotel Singapore, Chef Christopher has become a devoted ambassador of Singapore’s rich and multicultural food heritage. Beyond technique, he reinterprets time-honoured recipes through a contemporary lens, presenting classics alongside modern Singaporean favourites.
