Four Seasons Hotel des Bergues Geneva Presents “Dumplings by the Lake”

Four Seasons Hotel des Bergues Geneva has established a unique collaboration with Madame Sum to introduce Dumplings by the Lake, a contemporary, breezy hangout on Ile Rousseau with a menu of mouth-watering dumplings complemented by inventive drinks.

Founded in 2019 by three of Lausanne’s EHL Hospitality Business School graduates, Madame Sum is a creative dim sum company famous for creating colourful steamed dumplings in a diverse array of unconventional flavours delivered directly to the homes of customers’ throughout Switzerland.

The professionalism, experience and story of such a brand, combined with the youth and energy of Madame Sum as a start-up, will surely create an explosive and exciting environment in the heart of Geneva. Guests can come and enjoy a laidback, zesty atmosphere, play pétanque and sip their favourite drinks by the lake,” said Arnaud Verschueren, Co-founder of Madame Sum.

Aligned with Madame Sum and Four Seasons’ dedication to supporting youth entrepreneurship and helping turn business ideas into reality, the summer pop-up comes as a collaboration between Madame Sum, Four Seasons Hotel des Bergues and EHL Hospitality Business School. As part of their final year Student Business Project, six EHL students conceived Dumplings by the Lake, a modern and vibrant space where guests can unwind, soaking up panoramic views of the lake while enjoying dumplings and creative drinks. 

From now until the end of September 2022, Dumplings by the Lake will present all-day dining between 11:30 am and 9:30 pm, with a curated menu of dumplings tailored to both sweet and savoury cravings. There will be apple crumble, and indulgent chocolate spread fillings for those with a sweet tooth. Meanwhile, savoury creations feature fresh, seasonal ingredients, including grilled broccoli with roasted almonds, pulled duck and smoked barbeque brisket. Guests can also indulge in mouth-watering xiao long bao, classic Chinese soup dumplings traditionally served in a bamboo steaming basket and filled with minced pork, pork broth, ginger, sesame oil, Shaoxing wine, soy sauce and spring onions.

The menu includes healthy summer salad bowls for lunch accompanied by three mouth-watering dumplings. Salad options change regularly. From a rich and creamy caesar salad with dumplings flavoured with chicken thighs in a red wine and cream sauce to a lentil salad served with smoked BBQ beef brisket dumplings and an oriental salad with babaganoush and chickpeas served with roasted cauliflower and tahini dumplings. A selection of light soups, including a gazpacho, and a cream of cucumber and mint, will also be available. In the afternoons, guests can participate in a game of pétanque, a great way to spend a few hours by the lake.

As the sun goes down, lights are dimmed, and mixologists shake things up with crafty homemade drinks perfectly paired with the dumplings on offer and a selection of innovative side dishes with an Asian twist. The menu features shiso coleslaw and black garlic; grilled miso glazed eggplants; tender slices of beef grilled on a traditional Konro grill; and tempura fried asparagus. The meal is made complete with a collection of bespoke desserts made from locally-sourced ingredients.

Designed by Swiss design company Greset Reich, the space oozes an effortlessly contemporary vibe, with subtle hints of colour creating an exotic atmosphere and transporting guests to sunny Provence. With its trendy French Riviera feel, the pop-up is fitted with low tables and designer chairs in mellow pastel green and cream tones, with parasols in neutral hues. Splashes of greenery further create a youthful, serene look. Guests can unwind in the sophisticated surrounds or get a takeaway meal to enjoy in their preferred spot around the lake.
