AUSTRALIA | Four Seasons Hotel Sydney has embraced the use of truffles at its signature restaurant, Mode Kitchen & Bar.
Executive Chef Francesco Mannelli and his team have crafted a rich menu of winter favourites featuring seasonal fresh produce, with a selection of standout dishes accented by the fragrance of the season's season ingredient - decadent black truffle.
For something light, or to share, enjoy Chef’s signature Zucchini Flowers with buffalo ricotta and peas (AUD 34), or indulge in a vegetarian Tagliatelle “Ripiene” (AUD 48); both dishes, on request, doused with generous shavings of black truffle for a savoury, umami hit (AUD 20 per dish on request).
For those looking to be more adventurous, a hearty 180-gram Filetto Rossini, with foie gras and morel mushrooms and a flavourful truffle jus (AUD 78), is the perfect luxurious winter warmer. For the ultimate decadence, there is a daily special of Risotto Acquerello and Fresh Black Truffle (AUD 60).
Five unique live stations on the night will include antipasti and past, offering the rich tastes of Gnocco Fritto and Tagliatelle infused with truffles and finished in a Parmigiano wheel. The pizza station will include handmade pizza dough topped with creamy brie and dark truffles. The risotto and wagyu station will also allow guests to indulge in rich risotto with black truffle and hazelnut paired alongside a wagyu mayura station oyster blade, black truffle and egg yolk emulsion. The second and sides station will include succulent wagyu rump with polenta and a fagioli al fiasco with truffles. For dessert, authentic Italian tiramisu will be served, topped with delicate shavings of black truffle.
With elevated Italian wine parings curated by Sommeliers Aman Vikhona (Mode Kitchen & Bar and Four Seasons Hotel Sydney) and Piero Fonseca (The Standard Wine) on the night, this evening is the ultimate celebration of truffle in a relaxed Italian-inspired setting.
