Pan Pacific Melbourne will return as a pre-race favourite with the Fashion High Tea, served from 11 October to 30 November 2025.  

Set in the Pacific Club Lounge with sweeping views of the city skyline and the Yarra, this is a refined way to gather with friends at the Pan Pacific Melbourne before Flemington or simply soak up the Spring Racing energy in the heart of Melbourne. 

Crafted by Executive Chef, Trent Whelan and his team, the three-tiered menu celebrates Melbourne’s culinary flair with elegant savouries, signature scones, and fashion-forward sweets. Guests can choose premium teas or elevate the afternoon with Veuve Clicquot Champagne.

The pastry team brings a couturier’s touch to the dessert tier. Inspired by the millinery and accessories of Spring Racing, the chefs sculpt petite handbags and elegant forms with meticulous piping, feather-light mousses, and polished chocolate finishes. 

The stylish Floral Lace Macaroon is an explosive combination of strawberry mascarpone with rose champagne jello, whilst the Soirée Stunner is a red ballgown dressed in salted hazelnut chocolate foam, bronze crackle and a touch of 24-carat gold dust. Follow this with the Celestial Carry, the perfect purse-inspired treat, and lastly, complete the look with Golden Elixir, a passionfruit cube complemented by blood orange lemon gel and a delightful golden croustillant cluster.

The tea comes complete with Signature Scones in buttermilk, orange blossom, ruby chocolate and lavender, served with strawberry and rose petal preserve, lemon curd and clotted cream. Savoury bites include Torn burrata with baby peas, asparagus, bush apple gel, candied macadamia and olive, Mini lobster roll with finger lime and Yarra Valley salmon roe, Gin and citrus cured salmon with Geraldton Wax, dessert lime and Avruga caviar and Milawa chicken and Granny Smith apple pin wheel with compressed apple.
To keep the racing spirit alive, Pan Pacific Melbourne will also host complimentary canapés and French sparkling wine in the hotel lobby on major race mornings. Racegoers can start their day in true style before heading trackside, on Derby Day (Saturday 1st November), Melbourne Cup (Tuesday 4th November), Oaks Day (Thursday 6th November), and Stakes Day (Saturday 8th November).
