Wine & Dine at Onemata

Park Hyatt's signature restaurant Onemata will be kicking off their inaugural wine dinner series with the Billecart-Salmon long lunch on Saturday, 14 May. 

The five-course dining experience will showcase Chatham Island Food Co's locally-sourced seafood, expertly paired with Billecart-Salmon's most exclusive champagnes. 

Home to an exceptional collection of limited-edition wines, the restaurant's professional Sommelier, Suraj GC, will demonstrate the intricacies of the different Billcart-Salmon wines alongside a lunch menu expertly curated and created by Head Chef Rob Hope-Ede and Executive Pastry Chef Callum Liddicoat.

Drawing inspiration from Chatham Island Food Co's beautiful and sustainable selection of seafood, the long lunch begins with a kumara brioche with whipped kina crème, followed by paua, jalapeno crème fraiche. The third course features a mouth-watering crayfish risotto with thyme and mascarpone, followed by the fourth course serving Venetian style blue cod with sweet and sour onion and pinoli nuts. A dulcey with pear and honey will bring the dining experience to a sweet end. 

Onemata's wine dinner series provide food and wine enthusiasts the perfect opportunity to meet the experts and taste new and rare varietals.

The Billecart-Salmon long lunch is the first of three events where Sommelier Suraj GC has collaborated with prominent producers to develop one-off, exclusive wine and dine evenings.
