FRESH FACES DOWN SOUTH

Luxury Queenstown private hotel Eichardt's has appointed a new head chef and restaurant manager to its premier dining destination, The Grille.

Olivie Xie will take up the reins as head chef, working as right-hand man to the group's executive chef Will Eaglesfield.

With over fifteen years' experience under his belt, Xie brings a wealth of gastronomic experience to the exclusive South Island eaterie. Xie has previously held key culinary positions at a number of high-end restaurants, including Auckland's renowned Oyster & Chop by Darren Lim, Giraffe by Simon Gault and Darren Lim, Euro Bar, Jervois Steak House, and the Hilton's FISH Restaurant.

Formerly of Sofitel Queenstown, Martial Passignat is The Grille's new restaurant manager.

Having worked at Burgundy's Michelin starred Restaurant Le Charlemagne and La Villa Florentine in Lyon, Passignat furthered his experience at key tourism destinations around the globe, including stints in Corsica, Freycinet Tasmania, and Bora Bora.

"It's important to keep evolving in the fast-paced food and beverage world and we are very excited to have two new highly-skilled and passionate team members," said Imperium Collection group manager James Cavanagh. "Each will bring a fresh perspective to the restaurant."
